Your dough should look like this after you've mixed in all of the egg mixture and before you're ready to start #kneading it. Once you get here, it's time to start kneading. Really put your body weight into it, roll it without tearing the #dough. It will take anywhere from 8-15 minutes to get the right texture. #inthekitchen#italian#lasagna
Today I'm making #homemade#lasagna, beginning with the #dough. Using 2 cups (I find @kingarthurflour gives best results) of all purpose flour (or one cup all purpose and one cup whole wheat), make a 'well' - about 6-8 inches wide and 1-2 inches high
In the well, add 4 whole eggs and 1 yolk, 1/4 cup oil of choice, a bit of salt, and 1 tbsp of water
I've added some Italian seasonings, garlic powder, and crushed red pepper to mine, but that's preference.
Whisk the egg mixture in the well, careful not to break the sides or your mixture will run everywhere.
